The device, named SONOFAI T-01, will be launched in June 2025 and initially targets the seafood processing industry and fisheries cooperatives across Japan, with plans for global expansion. The initiative aligns with the growing worldwide demand for high-quality tuna, which has risen by 25% over the past 20 years, according to the Japan Fisheries Research and Education Agency.
SONOFAI T-01 utilizes Fujitsu’s ultrasound analysis AI technology—a core feature of the Fujitsu Kozuchi AI service—making it the first device capable of assessing the fat content of frozen tuna without causing any damage. This advancement eliminates the need for human visual inspection, which traditionally involves manually analyzing thawed cross-sections of the tuna’s tail. The conventional approach is labor-intensive, time-consuming, and subject to human error due to varying levels of experience and a limited pool of skilled workers.
With the SONOFAI T-01, a complete tuna inspection takes only 12 seconds and can be performed by a single operator. This boosts operational and labor efficiency by up to 80%. By facilitating fast, large-scale inspection of frozen tuna, the device eases the workload on skilled personnel, increases the speed and accuracy of the selection process, cuts down operational costs, and addresses the issue of labor shortages. Additionally, it minimizes the risk of mislabeling the premium fatty "bintoro" parts of the tuna, ensuring higher value and product consistency.
